Chocolate Covered Raspberry Jam Cups

INGREDIENTS


1 cup fresh raspberries


1/2 a fresh lemon, juiced


1/2 tsp maple syrup


1 tsp chia seeds



2 cups chocolate chips, 67% dark


2 tsp coconut oil



pinch of sea salt


DIRECTIONS

Place the washed raspberries in a medium sauce pan and heat on medium. As the raspberries are heating, add in the lemon juice and maple syrup. Stir frequently. After about 5-7 minutes, when the raspberries break down into a juice or light jam consistency, add in the chia seeds and stir.


While the jam mixture is cooking, start to prepare the rest. Line a regular sized cupcake tin with cupcake liners. In a microwave safe bowl, put 1 cup of chocolate chips (save the other cup for later) and 1 tsp coconut oil (save the other tsp for later). Microwave the chocolate chips and coconut oil for about 1 minute or until melted. Stir together until you get a smooth consistency. Evenly distribute the melted chocolate into the bottom of the cupcake liners, until at least the bottom is fully covered.


Once the raspberry mixture turns into a thicker, jam like consistency, remove from heat and let cool for 2 minutes. Evenly distribute the raspberry jam into each cupcake tin on top of the first layer of chocolate. This jam should lay flat on top of the chocolate, not a rounded ball. Place in freezer for 5-10 minutes or until hardened.


Melt the other 1 cup of chocolate and 1 tsp of coconut oil in a microwave safe bowl for about 1 minute or until melted. Stir together until you get a smooth consistency. Evenly distribute the melted chocolate over the raspberry jam until covered. Sprinkle a pinch of sea salt on top of each cup. Place in freezer for 15 minutes or until hardened.


Eat these straight out of the fridge (or freezer) for the best taste and crunch! ENJOY! :)
